The first and only distillery on the Isle of Wight was
licensed in 2014 by long term friends Xavier Baker and Conrad Gauntlett.
By combining a wealth of experience in brewing and wine-making with locally
sourced ingredients they have created premium spirits that express the beauty
and character of the Island they love. They create high quality, hand-crafted spirits for discerning and adventurous spirit drinkers who demand exceptional flavours and authenticity.
The Isle of Wight Distillery is committed to environmentally friendly production, the preservation of the Island and the marine environment. The selection of sustainable, recyclable and biodegradable materials together with energy-efficient production drives their goal of a no plastic, zero carbon future.
New to our shelves this month is their Pink Gin. Strawberries are steeped in the distillery's gin for four days in this expression, creating a delightfully sweet flavour profile. Great in a G&T garnished with strawberries.
Why not try their original Mermaid Gin? An infusion of carefully selected botanicals including juniper berries, rock samphire that is hand-picked from the island's chalk cliffs and Boadicea hops grown at the famous Ventnor Botanic garden. Along with English coriander seeds, fresh lemon zest, angelica root, liquorish root, orris root, elderflower, and grains of paradise, all contained inside a beautiful bottle. The gin is slow distilled, cut with Island chalk-fed spring water and then rested for 7 days before being bottled on the Island to give its signature smooth delivery and fresh, invigorating flavour.
60ml Mermaid Gin
30ml Apple juice
15ml Lemon juice
Fill a shaker with ice, add Mermaid, apple juice, lemon juice, chambord and stir to mix. Strain over ice, then garnish with lemon slices...and enjoy.
