This Sake is made using Yamada Nishiki rice which is grown in the Hyogo Prefecture. In a complicated procedure, the master brewer watches over the koji or rice, which has mould cultivated in it to aid fermentation, for 72 hours non-stop, to make sure the sake is the very best.
