About: Grown on a range of red, sandy soils over limestone in South Australia, using the principle of minimal intervention, the Chardonnay vines are allowed to achieve optimal ripeness through carefull irrigation and canopy management.
Fermentation using wild yeasts ensures a characterful expression of the grapes while a period of lees-aging and exposure to oak lends an extra dimension of complexity.
Tasting note: Fresh white peach and ripe melons on the nose complimented by subtle hints of vanilla and toast. Tropical notes of pineapple and banana on the palate with a balancing acidity and refreshing finish.
