About: Founded in 1831, Albert Bichot’s vineyards now encompass six estates that cover Burgundy from north to south. Working together with their grower partners, they practise sustainable viticulture with a commitment to converting fully to organic viticulture in the Côte d’Or.
The wine undergoes a ten-month aging period on the lees in stainless steel tanks prior to release.
Tasting note: If shellfish and seafood starters are on the menu this Christmas then Chablis is de-rigour. Mineral, saline and extremely civilised.
