Grape info: Spain’s most planted white variety and producer of some of its most venerable whites, Macabeo is widely grown throughout much of the country, producing lightly aromatic, floral wines that respond well to oak aging.
About: The Borsao winery was established as a co-operative in 1959 and in 2001 joined forces with another two progressive co-operatives. The Campo de Borja’s hot, arid climes allow grapes to achieve full ripeness whilst maintaining optimal acidity levels for freshness.
After chilling the must, a short period of skin contact is followed by long slow fermentation at controlled temperatures in stainless steel tanks.
Tasting note: Ripe citrus fruits with floral hints of elderflower and a touch of tarragon. Clean and fresh.
