The team behind Cornish Orchards love keeping things local, but because apple harvest season (mid-September - late November) is the only time they can press and source their fruit, sourcing the best apples from other farmers is always a priority. This is so they ensure that they have enough freshly pressed juice every year to make enough cider for everyone to enjoy all year around. But where possible, they use local apples, and they have a local apple delivery scheme where each year they take in surplus from others in Cornwall rather than letting them go to waste.
Once in, all apples are pressed on their farm in Duloe to be fermented and then hand-blended by their team of Cider makers following a period of maturation which allows the natural, full flavour of their ciders to develop.
They don't believe in forced fermentation, using temperature-controlled technology. Instead by working harmoniously with the seasons using the cold, ambient temperatures of Cornwall's winter months, they can achieve a healthy fermentation which imparts maximum flavour and adds character to the cider.
