Limoncello is traditionally made from Sorrento lemons or Sfusato Lemons. The lemons are zested, the pith is not used, and steeped in neutral spirit which releases the lemon's oils into a solution. This is then mixed with a simple sugar syrup, and produces a natural lemon flavour.
