Grape info: Though there is some debate over what exactly Grillo ought to taste like, it has undoubtedly emerged as one of Sicily’s highest quality grapes. Modern winemaking has brought about attractive, aromatic expressions, not dissimilar to Sauvignon Blanc with notes of citrus and dried herbs.

Info: Breathing new life into ancient and unique vineyards across Italy, Minini seek to marry new technologies with tradition. Here, the grapes are dried prior to fermentation (appassimento), concentrating their flavours, lending richness and texture to the wine.

A light pressing ensures the delicate fruit flavours are preserved. Fermentation is followed by a short period of maturation in stainless steel tanks.

Tasting note: Citrus, honey and orange blossom aromas precede a full-bodied, floral palate with herbaceous notes and a fine minerality.
