Grape info: Though indigenous to France, Sauvignon’s unique aromatic profile has seen it successfully transplanted all over the world to become the third most cultivated variety, behind only Chardonnay and Airén. Its enduring popularity is down to its distinctive, multi-layered combination of youthful, ‘green’ flavours matched with a keen acidity, capable of producing wines of real substance.
About: Founded over a century ago, Viña La Rosa is located in one of Chile’s most exciting wine regions in the Cachapoal Valley: Peumo. Today, the traditions of its founders inspire a sustainable approach to viticulture and continue to inform a terroir-based mindset where respect for the environment is paramount.
The grapes are machine harvested at night, while still cold, to preserve fresh fruit aromas and flavors. After the crush, the grapes are cold skin macerated over 4 to 6 hours at 8°-10°C to extract the aromatic compounds from their skins. The juice is clarified and fermented with selected yeast in stainless steel tanks at 14° to 16°C, which enables it to develop all of its varietal potential.
Tasting note: Fresh and fruity, with notes of citrus, pineapple and white peaches with touches of herbaceous, wild currant and lychee.
